Ingredients

16 oz elbow casserole noodles
2 5-oz cans of albacore tuna in water
1 medium onion
2 cloves garlic
1/2 tsp oil
2 tbsp butter
2 tbsp flour
1 cup skim milk
1 10-oz package frozen chopped spinach, thawed
6 oz grated cheddar cheese
2 tbsp grated parmesan cheese
Directions
cook noodles
saute onion in oil until translucent. Add garlic and saute 30 seconds more. Set aside.
Defrost spinach and press out liquid, set aside.
Drain and Flake tuna, set aside.
In a medium saucepan, melt butter and then add flour. Slowly pour in milk and stir until thick. Add cheese and onion/garlic mixture and stir until cheese is melted. Add spinach and tuna and mix with drained elbow noodles.
Turn into a greased 9 x 12 casserole dish. Sprinkle on grated parmesan cheese.
Bake, covered, at 350 for about 30 minutes.
