Introduction
Great, easy to prepare and tasty way to increase your vegetable intake. Great cooked on low in slow cooker too. I like mine served in a pasta bowl with a little shaved parmesan on top and some garlic bread. A good, filling winter warmer. Great, easy to prepare and tasty way to increase your vegetable intake. Ingredients

2 onions, chopped.
2 t garlic, either finely chopped or crushed.
2.5 cups mushrooms, sliced.
2 x 810g. cans chopped tomatoes, no added salt.
2 T basil.
1 T ground oregano.
35g tomato paste.
1 cup water.
400g. silverbeet, leaves shredded, stalks finely chopped.
1cup wholemeal pasta spiral, uncooked.
Directions
Spray pan lightly with cooking spray, gently fry onions and garlic till soft.
Add mushrooms, cook stirring till mushrooms begin to soften.
Combine chopped tomatoes, herbs, tomato paste and water, add to pan stirring gently to combine.
Add silverbeet, stir once more.
IF COOKING ON STOVE -
Bring to boil and add pasta, stirring to combine..
Simmer gently, stirring occasionally, for 30 min.
IF USING CROCKPOT -
Transfer to crockpot, bring to boil on HIGH.
When boiling add pasta and stir to combine.
Turn heat setting to LOW and stir occasionally, cooking for 2 - 3 hours.
Season to taste (I don't add any salt or pepper).
Makes 6 x 1.5 cup servings.
