Introduction

This is for a splurge day. It's a "not as bad for you" way to enjoy fried chicken. This is for a splurge day. It's a "not as bad for you" way to enjoy fried chicken.
Number of Servings: 4

Ingredients

    4 boneless chicken breasts, cut in half and pounded flat
    1 cup all purpose flour
    1/2 cup bread crumbs
    1 egg
    3/4 cup milk
    2 tbsp garlic powder
    1 tbsp onion salt
    1 tbsp of paprika
    1 tbsp salt and pepper

Directions

Mix egg and milk together to make egg wash. Mix flour, bread crumbs, garlic powder, onion salt, paprika, salt and pepper to make coating. Dip each breast in egg wash letting the excess drip off. Coat both sides with bread crumb mixture and shake off excess.

Heat a skillet with 1/4 inch vegetable oil unitl oil shimmers. Lay chicken in pan, and cook for about 2 minutes each side or until golden brown. (Oil must stay hot enough to maintain a medium-high bubbling so the chicked doesn't absord a lot of oil.)

Serves 4.
