Introduction

Ingredients

1/2 C chopped green pepper
1/2 C chopped onion
2 cloves garlic
1 T olive oil
1 can black beans, drained
1 C corn kernals (frozen, canned or fresh)
4 Whole Wheat tortillas, 8 inches each
Directions
Use a medium skillet on medium heat. Add 2 t of oil to skillet with green pepper and onion. When pepper and onion begins to caramelize, add beans, corn and garlic and cook until heated through, about 5 minutes, stirring frequently.
In another skillet, add remaining teaspoon of oil and allow it to warm on medium heat. Place one tortilla in skillet and layer 1/4 of the black bean mixture and 1/4 of the cheese on half the tortilla. Fold over the filling. Cook for approximately 1-2 minutes per side until cheese is melted and tortilla is slightly crisp. Repeat for other three quesadillas.
Serving suggestion: Top with salsa and reduced-fat sour cream.
