Ingredients

    2 cups brown minute rice cooked and chilled
    1 large cucumber peeled and chopped
    1 green pepper chopped
    2 stalks of celery chopped
    1 cup of cherry tomatos (halfed)
    1T Mayo
    1T Italian dressing

Directions

Cook brown rice as directed and chill
Once rice is chilled add all chopped veggies into large bowl with rice and then add dressing and mayo. Mix together and serve chilled!

Have fun with it, just like pasta salad!
