Ingredients

1 lb extra lean ground beef, browned and drained.
1 package (12 ea) soft corn tortillas, torn into quarters
1 (10 oz) can Old El Paso Enchilada Sauce (mild)
1 can Campbell's Healthy Request cream of chicken or cream of mushroom soup.
1 bag (2 cups) of Great Value Fiesta Blend Shredded cheese.
*Best if topped with light or fat-free sour cream, but that is not included in the nutritional info.
*To reduce fat/calories further use reduced fat or fat free shredded cheese.
*This would also be good using cooked, shredded chicken.
*If desired, you could use hot enchilada sauce and jalapeņo slices, or onions to add extra flavor and some heat.
Directions
Makes approx. 8, 1-cup servings.
Brown and drain meat. Tear tortilla's into pieces, (about 4 per tortilla)
Combine sauce and soup. Layer half meat, half tortillas, half cheese, half sauce. Repeat.
Cook on high for 2 hours.
Yum!
