Ingredients

    19 oz can black beans, drained and rinsed
    11 oz can corn niblets
    1-½ pint cherry tomatoes, halved
    3 green onions, chopped
    1 small Jalapeño pepper minced (pickled is fine)
    2 tbsp apple cider vinegar
    ½ tsp oregano
    1 tsp cumin
    ¼ tsp salt
    1/8 tsp pepper
    1 tbsp olive oil

Directions

Combine beans, corn, tomatoes and green onions. In small bowl add jalapeño, vinegar and spices. Whisk in oil. Add to bean mix and stir. Chill well.

Makes 7 1 cup servings
