Ingredients

    Bread, whole wheat , 6 slice
    Egg, fresh, 4 medium
    *Egg white, 4 serving
    Milk, 1%, 1 cup
    Vanilla Extract, 1 tsp
    *Peaches, fresh, 5 cup slices
    Brown Sugar, 3 Tbsp packed
    Cinnamon, ground, 1 tsp
    Lemon juice, 1.5 tbsp

Directions

Spray a 9 by 13 inch baking pan with cooking spray. Slice whole wheat bread into 1/2 inch slices and arrange the slices in a single layer in the baking pan. Whisk together the eggs, egg whites, milk and vanilla. Pour the egg mixture over the bread in the pan. In a medium bowl, toss peaches with the lemon juice and 1 tablespoon of the brown sugar. Scatter the peach slices evenly on top of the bread. Combine the reaming brown sugar and cinnamon and sprinkle over the top. Cover and refrigerate.

Preheat the oven to 350 degrees F. Uncover and bake for 40 minutes.

    This was an awesome recipe! I made it the night before and served it to overnight guests. They all loved it. I actually stretched it to serve 8. Yummy and not too sweet. A good change from the sausage/bacon breakfast casseroles. - 6/22/08
