Introduction
I wanted to try substituting lentils for ground beef in my usual chili recipe. I wanted to try substituting lentils for ground beef in my usual chili recipe.Number of Servings: 8
Ingredients

1 cup red lentils
1 cup water
1 tbsp olive oil
1 large onion chopped
2 med carrots chopped
2 tsp minced garlic (2 cloves)
2 celery stalks chopped
1 cup chopped peppers (I used red, orange and yellow)
1 can red kidney beans (rinsed)
1 can chickpeas (rinsed)
1 lg can diced tomatoes (784ml)
1 tsp chili powder (indian chili, for regular supermarket add 1tbsp)
1 can peaches & cream corn (or other canned corn-rinsed)
Directions
in large pot fry onion, garlic, carrots, peppers and celery until onion is translucent. Add lentils and water and bring to a boil. Add remaining ingredients except for corn. Add corn about 20 mins before you want to serve.
Serve with blue corn chips or on top of rice or however you like.
