Introduction

Number of Servings: 4

Ingredients

    1/2 cup cooked spinach
    2 skinless, boneless chicken breasts
    2 wedges of laughing cow light swiss cheese
    1/4 cup Progresso Italian Style bread crumbs

Directions

1. Preheat oven to 400 degrees.

2. Place chicken breasts between two pieces of plastic wrap or parchment paper and pound until 1/4 inch thick.

3. Spread one wedge of cheese onto each chicken breast then disperse the spinach between the chicken breasts.

4. Roll up and secure with toothpick. Toss in bread crumb mixture to evenly coat.

5. Bake at 400 degrees for 35 to 40 minutes.


(To add more flavor try adding parmesean cheese and garlic to the bread crumb mixture.)

- Serves 4 (Chicken breasts are approximately 1lb, some packages come with three smaller ones)
