Number of Servings: 18

Ingredients

    1 medium sized granny smith apple, with skin--chopped finely
    3 tbsp ground cinammon
    1 tbsp ground clove
    1 tsp baking powder
    1 medium size egg
    1 c granulated sugar
    2 c oatmeal quick oats
    1/4 c vegetable oil
    1/3 c + 2 tsp lowfat, lactose free milk
    1 tsp vanilla

Directions

1) Preheat oven to 150 Celsius. Line muffin molds with paper cups OR spray pan with a nonstick spray.
2) Combine sugar, oatmeal, baking powder, cinammon, and clove.
3) In separate bowl, combine milk, eggs, oil, and vanilla.
4) Add the liquids to the dry blend. Mix thoroughly until all lumps disappear. Turn in chopped apple pieces.
5) Pour in to 18 medium sized muffin molds. Pop in to oven for 30-35 minutes.

Let cool and Enjoy!
