Ingredients

    1/2 pound fresh asparagus, washed and trimmed
    2 cups lettuce, any type, shredded
    2 hard boiled eggs, sliced
    2 tsp. olive oil
    2 tsp. vinegar
    1 tsp. mustard, any type
    1/2 tsp oregano
    salt and pepper

Directions

This recipe serves one person and can be easily scaled to feed more.

Saute the asparagus in a non-stick pan over medium-high heat until tender, 5 minutes. (Or, boil 5 minutes.)

Place lettuce on a dinner plate. Top wtih asparagus and sliced egg.

Whisk together oil, vinegar, mustard, oregano, salt and pepper. Drizzle dressing over salad.
