Introduction

A wonderful treat not only in flavor but also in visual appeal. You'll want to open the oven to watch it puff, but don't -- the end result is worth the wait. Ingredients

    2 tsp butter
2 baking apples, peeled, cored and thinly sliced
    egg substitute = 3 eggs
1/2 cup 2% milk (or your choice)
    1/3 cup all-purpose flour
    1/4 tsp baking powder
    dash of salt
    2 tsp brown sugar
    1 tsp cinnamon
    1 tsp splenda

Directions

Preheat oven to 425. Melt butter in large skillet. Add apples and saute for about 5-6 mins. Place apples in 8" square baking pan that has been coated with cooking spray.

Whisk together egg substitute, milk, flour, baking powder and salt. Mix until smooth. Pour the egg-milk mixture over the apples.

Combine brown sugar, cinnamon and Splenda. Sprinkle over the eggs.

Bake pancake for about 15-20 mins. until puffed and golden brown.

NOTES: To enhance flavor I usually double the amount of brown sugar, cinnamon and Splenda, and sprinkle approximately half the mixture on the apples before pouring egg mixture over. The remaining half is sprinkled on top of the egg mixture.

Makes 4 servings; serving size 1/4 recipe.

I skip the butter, sugar and Splenda, but otherwise make this the whole time! - 8/9/10
