Ingredients

3 cups cooked brown rice
1 can black beans = 3.5 1/2 cup servings
1 cup Kraft Shredded Cheddar 2%
2 cups of fresh salsa
8 oz. cooked ground beef, crumbled as it cooks
Directions
Cook 1 and 1/2 cups of brown rice to make 3 cups of rice.
In a 9x13 inch glass pan, layer 1.5 cups of cooked rice, the can of black beans, the cooked, crumbled ground beek, 1 cup of salsa, and 1 cup of shredded cojack cheese. Top with 1.5 cups of cooked brown rice and a few sprinkles of cheese.
Cover with foil. Bake at 350 degrees for 1 hour.
Prepare a variety of chopped toppings to serve at the table: avacado, green onions, green pepper, olives, fresh tomatoes, and plain yogurt or sour cream.
