Introduction

I modified a yogurt recipe from the database. My husband is on a low sodium diet and my father-in-law who is diabetic was coming for a visit. I came up with this one and it was really good. With so few calories, everyone ate until they were full and we met everyone's diet needs. I modified a yogurt recipe from the database. Ingredients

    1 1/2 c fresh blueberries
    2 1/2 c whole wheat flour
    1 tsp baking soda
    2 tsp baking powder
    1 c sucralose sweetner (Splenda)
    1/3 c no sugar added applesauce
    1 large egg
    3/4 c Dannon Light & Fit Vanillia yogurt

Directions

Preheat oven to 350 degrees. Combine dry ingredients. Mix in applesauce, egg, yogurt and blend until smooth. Add blueberries and mix by hand. Pour into muffin tin sprayed with no calorie cooking spray. Bake for 17-23 minutes, or until golden brown.
