Introduction

Number of Servings: 20

Ingredients

    2 cups onions
    2/3 cups bell pepper
    start with 1/3 cup oil
    1 cup celery (2 stems)
    1 cup white part of green onion (or shallots)
    4 pods garlic
    1 tsp salt (ham is salty)
    3 lbs ground beef
    1 1/2 lbs ground pork
    2/3 lb ham

Directions

Burn iron pot: cover with oil and smoke it. Turn off fire. Cool and pour out oil into a cup.

Heat 1/3 cup oil and add onions until dark brown.

Add beef and pork and 1/2 of the chopped green pepper, celery, and garlic.

Cover and cook 15 to 20 minutes.

Add diced ham and green onions.

Cook 10 minutes more.

If needed to keep dressing juicy, add a little boiling water.

Cook rice separately and add.
