Ingredients

    1/2 lb. Ground Beef
    4 lg.white potatoes
    2 lg. cans tomatoes
    3 cups frozen yellow sweet corn
    1 lg. raw onion
    3 Tbsp. garlic powder
    1 Tbsp basil
    1 sprig parsley

Directions

Peel and cube potatoes, cover with water in a large soup pot. Peel and chop onions into large chunks. Add to potatoes with corn and tomatoes. Brown and drain ground beef. Add beef and spices to soup. Simmer for 90 minutes or longer if desired. Best made the day before and reheated next day. (Also helps to reduce fat content if refrigerated. You can then skim some of the solid fat if desired that rises to the top. I then add a few more spices to re-flavor and simmer again for at least 30 minutes).
