I make a huge batch of these, eat some and freeze some. The recipe could certainly be cut in half. Ingredients

    6 whole bell peppers, green, red, orange or yellow
    6 cups of cooked quinoa (cook with veggie broth for extra
    flavor)
    4 Trader Joe's Chicken Sausages
    (I use spicy italian, other types will probably work just fine)
    1 cup Trader Joe's Traditional Marinara Sauce
    3 Tbsp grated parmesan cheese
    2 packed cups chopped kale
    Garlic, pepper, spices to taste

Directions

Preheat oven to 350 while prepping everything else. Cut bell peppers in half and clean. Mix marinara with quinoa and warm over medium high heat. Cut sausages in quarters lengthwise, then chop into 1/2 inch pieces. Mix with quinoa. Add kale and mix. Cook till kale wilts. Add spices to taste Fill peppers with filling. Sprinkle parmesan over them. Bake for 30 minutes or until desired doneness. Some may like to add mushrooms, onions and other veggies to filling
