Ingredients

2 cups Brown Rice
1 cup Lentils
6 cups Water
1/2 cup Parsley
100 grams or 250 ml Green Olives
3 Roma Tomatoes, chopped
1 small Onions, chopped
1 medium Red/Yellow/Green Pepper (which ever you prefer), chopped
1/2 tbsp Extra Virgin Olive Oil
Dash of Salt and Pepper
1/2 tsp Oregano
Directions
Combine the Olives, Tomato, Onion, Pepper in a bowl. Drizzle with a little olive oil and some of the juice from the olive container. Add Oregano. Season with salt and pepper to taste. Cover and refrigerate.
I like to add a little crushed red pepper flakes to the mix as well, just to give it a little kick.
Combine the rice, lentils and water in a large pot. Bring to boil. Cook until all water has been absorbed (about 30 minutes). Remove from heat and stir in the Parsley.
In each bowl, top the RIce and Lentil Mixture with the Olive mix and serve.
