Ingredients

    1 box Farfalle (bowtie) pasta
    1 tbsp safflower or other healthy oil
    1 jar roasted red peppers, diced
    1 can sliced black olives
    1 can artichoke hearts, diced
    1 package grape tomatoes, halved or in thirds
    1 tbsp red wine vinegar

Directions

Cook pasta al dente. Toss with oil. Add all veggies and toss. Finish with vinegar to taste and toss again.
