    2 lb. chicken breast, cut in 1 in. cubes
    1 T. canola oil
    1 c. chopped onion
    1 c. chopped gr. pepper
    14.5 oz. can diced tomatoes, Italian Style
    2 tsp. garlic powder
    1 T dried oregano
    1 tsp. fennel seed
    1/2 tsp. black pepper
    1 c. sliced black olives
    4 oz. sliced pepperoni
    1 c. Italian three cheese, 2% milk


Heat oil in large, ovenproof pan. Saute chicken over medium high heat. Add onion and gr. peppers. Saute until onion is translucent. Add tomatoes through black olives. Bring to a boil. Cover and simmer 20 minutes. Heat broiler. Add pepperoni to mixture. Sprinkle cheese on top. Place under broiler until cheese bubbles and browns. If you don't have an ovenproof pan, the chicken mixture can be transferred to a casserole pan and broiled.
