This makes just barely enough to fit a large pie pan when you roll it out very thin, but it is the perfect amount of crust when you're eating it. Ingredients

1 3/4 cup Flour
3/4 tsp salt
1/2 cup olive oil
1/4 cup milk
Directions
combine the flour, salt and oil until mixed well with a pastry fork. Add milk and mix with hands. Split in half and roll out between to pieces of wax paper. put in bottom of pan and peel other peice of paper off. fill with your choice of pie filling. Roll the other half out and do the same thing over the top. cut a few steam holes making sure you have one in the middle. bake at 350 for about an hour and 1/2 (until juices are bubbling in the middle. If the crust gets too brown before the juice bubbles, cover with foil. makes about 9 slices of pie.
