Ingredients

    2 cups shredded Zucchini (skin and juice included-remove seeds if large)
    2cups flour
    2cups sugar
    3 eggs
    1/4 tsp baking powder
    2 tsp baking soda
    2 tsp vanilla
    3 tsp cinnamon
    1 cup chopped walnuts (optional)
    1 tsp salt


Directions

beat eggs, add sugar and zucchini, mix well, add dry ingredients, mix, add vanilla and nuts. Pour into two loaf pans. Bake at 350 for 1 hour.

    I plugged the recipe into the calculator and it came out to over 2800 calories (as one serving, of course...). If it's divided into 9 servings, it's 312 calories per serving, without the walnuts. - 9/25/07

    INCREDIBLE!!!!! So moist & it smelled so good while it was baking we could hardly wait for it to get out of the oven so we ate it while it was still piping hot. No need for any butter at all :) Perfect!!! My girls can't stop eating it. I will definitely make this again. Thanks for the recipe!! - 8/10/11
