Introduction

This is a super easy and delicious, low fat snack or breakfast. My children love it and I love it not only for the taste, but the zuchinni packs nutrients in and my kids don't even know it's in there! I substituted the oil for unsweetened applesauce and talk about moist??? Whew...these suckers are GOOD!!! This is a super easy and delicious, low fat snack or breakfast. Ingredients

    3 Cups Whole Wheat Flour
    1 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon baking powder
    4 teaspoons ground cinnamon
    3 eggs
    1 cup unsweetened applesauce
    2 1/4 cup granulated sugar
    3 teaspoons vanilla extract
    2 cups grated fresh zuchinni

Directions

Grease muffin pans. (will make 24 muffins) (I use a cooking spray) Set oven to 325.

Combine in small bowl:
Flour, salt, baking soda, baking powder and cinnamon. Combine well!

In large mixing bowl, cream together:
Eggs, applesauce, vanilla and sugar. Beat very well.

Add dry ingredients to egg mixture a little at a time until all is blended. Add zuchinni. Pour into muffin pans, filling them 1/2-2/3 full. Batter will rise.
Bake approximately 25 minutes. Check muffins. If they bounce back when lightly touched, they are almost done! Continue to cook additional 10 minutes with oven off and door closed. This somehow is a huge secret and step that needs to be done.

Remove from muffin pans. Allow to cool and serve. Place in sealed container at room temp for 4 days or refrigerate for up to 7 days. Freezes well!!!

    This was good, very moist, but way too sweet. Next time I make it I will use half the amount of sugar. - 9/2/10

    Incredible!
    As trying to use up frozen zuchinni, had to strain out the liquid after thawing. As another member suggested, lowered the sugar. The muffins were a bit dry, so not sure if it was the less sugar or frozen zuchinni. Next time will use all the sugar but still have lots of frozen zuchinni! - 1/1/18

    Very Good
    i did not find these too sweet, but may try to cut back a little on the sugar anyway. I am also going to add walnut and possibly raisins to my next batch (my husband loves raisins!) I found these very moist and delicious and one satisfied me for a lunch. - 8/25/12
