this is a great vegetarian entree, with plenty of flavor, protein from the qunioa, and today i used fresh sage from my garden! i used brown mushrooms, but feel free to experiment with different types...

Number of Servings: 3

Ingredients

    1 tbsp sunflower oil
    3 tbsp chopped shallots
    3 tbsp minced garlic
    1 tbsp fresh sage
    1 1/2 C chopped mushrooms
    1 C vegetable broth + 1/4C water

Directions

1. sautee the shallots and garlic in the oil on medium heat, for about 5 minutes. then add the sage and mushrooms, season with a pinch of sea salt, continue to sautee for another 5 minutes
2. add the vegetable broth and the water and the quinoa and simmer for about 15 minutes, until all the liquid is absorbed.
3. let it sit for five to ten minutes to allow all the flavors to infuse the quinoa, as well as to let it cool a little! then fluff with a fork and serve!

makes 3 entree sized servings, or 5 side-dish servings!
