Ingredients

    3 egg white
    1 c smart sugar
    1 t vanilla
    20 saltine crackers, crumbled (can use Ritz crackers)
    1 c pecans (or nuts of choice)
    (can add choc. chips for added touch)

Directions

Whip egg white until stands in peaks; add smart sugar, a little at a time, then vanilla & whip. Crush crackers; stir in with pecans to mixture. Pour in buttered or sprayed pie pan. Bake at 350 for 23 minutes. Chill & top with lite whipped topping.
