Introduction

Ingredients

3 cups vegetable broth
3/4 box whole wheat rotini (makes about 5 1/4 cups)
pam cooking spray
2 cloves minced garlic
2 c. onions, chopped
2 c. celery, finely chopped
2 c. fresh broccoli, chopped
1 can 98% fat free cream of mushroom soup
1.5 c. frozen peas
2 cans of chunk light tuna, drained
3/4 c. nonfat milk
1/2 tsp. salt
1 bag of Kraft fat free cheddar cheese (reserve 1/2 cup)
2.3 oz. Baked Ruffles potato chips, crumbled
Directions
Cook noodles in broth till desired tenderness is reached; drain. Spray large fry pan with Pam cooking spray. Add garlic and onion to pan over medium heat. Cook till onion begins to soften, about 3 minutes. Add celery and broccoli, reduce heat and cover. Cook for 10-12 minutes, or till veggies reach desired tenderness.
Meanwhile, mix drained pasta with can of mushroom soup, peas, and drained tuna in a large bowl. Add cheese, reserving 1/2 cup for topping. Add cooked vegetables and mix well.
Spray Pam into casserole dish. Spoon mixture into dish and make top level. Sprinkle with remaining cheese and crumbled chips. Bake covered at 350F for 20 minutes, then remove lid for an additional 3-4 minutes for chips to brown lightly.
*Note: I drained about 1.5 cups of broth off of the cooked pasta, so the nutrition information is calculated with only 1.5 cups of broth.
