Introduction

A light salad, you can have it without the chicken to make it a side dish. A light salad, you can have it without the chicken to make it a side dish.

Ingredients

    6 Tbsp. parsley chopped
    2 cloves garlic, minced
    6-8 Tbsp. lemon juice(fresh squeezed is best)
    2 tomatoes seeded and chopped
    1 cucumber peeled, seeded and chopped
    1 medium red pepper seeded and chopped
    1/2 c. feta cheese (use reduced fat for less calories)
    8 ounces chicken breast

Directions

Put garlic and parsley in a mixing bowl and combine. Wisk in lemon juice. Add all vegetables. Add 6 Tbsp. of the feta cheese and toss. If using chicken bake in a 375 degree oven for 45 minutes make sure to check for doneness. Put chicken on top then sprinkle the remaining feta cheese on top.
