Introduction

These are a family favorite at Christmas, and I knew I would need to lighten them up if I wanted to eat them without guilt. The cottage cheese was an experiment, and they turned out really good! I used less cheese than I usually do, and could probably do with less chicken soup, but it turned out great. Definitely not something you'd eat a lot of though! Ingredients

    western family cream of chicken soup, 2 cans
    sharp cheddar cheese, 3 to 4 C shredded
    Fat Free Sour Cream, 1 Container
    8 large baking potatoes, baked and shredded
    3 strips bacon, cooked, drained, crumbled
    1 Cup chopped sweet onion

Directions

Mix the soup, sour cream in a large bowl. In a 9x13 sprayed pan, dump the shredded potatoes, bacon and onions. Stir in the soup mixture along with cheese. make sure everything is evenly coated. Can sprinkle more cheese on top, but there is plenty of cheese inside.
Bake at 350 for 45 to 50 minutes. Serves 24. Great for parties!
