Red Wine, 1 fl oz (remove)
Plums, 1 fruit (2-1/8" dia) (remove)
Romaine Lettuce (salad), 1 cup, shredded (remove)
Romaine Lettuce (salad), 1 inner leaf (remove)
Olive Oil, 1 1tsp (remove)
*Kraft Parmesean Cheese 2tsp 5 grams, 1 serving (remove)
*Grey Poupon Dijon Mustard, 1 tsp (remove)
*Horizon Organic Fat Free Yogurt, Plain, .33 cup (remove)
Lea & Perrins, Worcestershire Sauce, 1 tsp (remove)
Directions
This makes just enough for one person.
Combine red wine and slices of the plum in a sauce pan and bring to a boil. You may try some rosemary or herbs de provence.
Season Chicken with kosher salt on both sides and place in boiling liquid.
Chop romaine lettuce and spritz some white vinegar on it and let set. Pat dry later.
Combine EVOO, Dijon, yogurt, and Lea & Perrins. Whisk together until emulsified. Coat dry lettuce and add grated Parmesan.
Check chicken for doneness and let rest for 5 - 10 minutes.
Slice as desired and enjoy.
