Ingredients

    8 large eggs
    1/4 cup lite soy milk
    1 green onion, chopped
    1/2 cup of fresh spinach, chopped
    1/2 medium sized red pepper, chopped
    1 tsp Mrs Dash, original blend

Directions

Break eggs into medium sized bowl and whip until light and fluffy. Add chopped vegetables and seasoning.

Heat non-stick pan over medium heat. Add egg mixture and cook until no longer runny.
