Introduction

Very filling. Will last in fridge for several days. Great during the summer for lunch or light supper! Serving size (for nutritional purposes) is approximately one cup. Very filling. Ingredients

    1 1/2 T Olive Oil
    3/4 cup Lemon Juice
    1 cup diced cucumber
    1 cup Parsley, minced
    1 can chickpeas (garbanzo beans)
    1 1/4 cup whole wheat couscous
    1 t Dijon Mustard,
    1 T. chopped fresh mint,
    1 cup diced tomatoes or approx 20 grape tomatoes, halved

Directions

Cook couscous in 1.75 cups water or chicken broth. Mix remaining ingredients. Season with salt to taste.
