Introduction

The Pineapple slaw is a great tasty side to any meat entree. But it compliments the pork nicely. The Pineapple slaw is a great tasty side to any meat entree. But it compliments the pork nicely.
Number of Servings: 4

Ingredients

    4-3 oz. lean boneless pork chops (I used thin)
    kosher salt and pepper to taste
    2 tbsp ketchup
    1 tbsp honey
    1/8 tsp chili powder
    1/8 tsp cumin powder

    3 cups thinly sliced pineapple
    1 red bell pepper thinly sliced
    4 tbsp coarse chopped cilantro
    1 large lime - fully juiced

Directions

preheat oven 350 degrees.
Mix ketchup, honey, chili and cumin powder.
Brush on pork loins.
Spray cooking oil on pan.
Bake pork for 15-20 mins, turning over once to brush with marinade again.
Once fully cooked, let sit for 5 mins. Brush remaining glaze on pork.

Salad:
Toss pineapple, bell pepper slices, cilantro with lime juice.
Serve with pork.
