Ingredients

1 cup whole wheat flour
1/4 cup sweetener (I will use Erythritol)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 TBSP poppy seeds
1 serving of Smart Bran cereal
1/4 cup non-dairy milk
2 TBSP ground flax seeds + 4 TBSP warm water
3 tsp oil
1/3-1/2 cup unsweetened apple sauce
1 container of lemon non-dairy yogurt
1 TBSP lemon juice
1 tsp powdered sugar
Directions
Preheat oven to 350 degrees.
Mix the flour, dry sweetener, baking powder, baking soda, salt and poppy seeds together. Set aside.
In another bowl, mix the Smart Bran, non-dairy milk, flax mixture, oil, apple sauce, lemon juice and yogurt together. Let stand until cereal softens. Once cereal has softened, add the dry mixture.
Spray non-stick spray into an 8 x 8 baking pan. Pour the mixture into the pan. Bake for about 25 minutes of until toothpick comes out clean. Let cool and then dust with powdered sugar.
