Ingredients

    12 oz salmon divided into 4 3oz fillets
    olive oil
    1 can black beans
    1 can corn
    1cup chopped onions
    2 cups romaine lettuce shredded
    2 tbspn essence seasoning by emeril lagasse or other creole style seasoning

Directions

Heat olive oil in nonstick skillet and cook salmon fillets. Fillet is done when salmon is flaky. Combine other ingredients for the salad, and top with one of the salmon fillets. To cut back on calories, season with your favorite seasonings and spritz with lemon juice.
