The nutrition info includes the basic ingredients but you can add almost anything to taste -- cumin, chili powder, chopped red or green bell pepper or hotter peppers to taste. Ingredients

    1 can Rotel tomatoes and chiles
    1 can black beans
    3 cups brown rice (cooked)
    1/2 cup chopped onion

    Add to taste: chili powder, cumin, chopped bell pepper, chopped hot pepper, garlic peas, green onion, etc. If preferred, top with cheese or sour cream, but add this separately for nutrition info.

Directions

Cook 3 cups of brown rice according to directions (that's where the hour comes in). Drain black beans. Add beans, tomatoes, additional veggies and onions, plus any preferred spices. Simmer to heat. Serve.

    Very Good
    Love this recipe. Rotel adds a little kick to the dish. I also stir in some diced chicken breast along with the chili powder and cumin. - 3/26/12
