Introduction

A mango and red pepper salsa that my husband puts on grilled chicken. A mango and red pepper salsa that my husband puts on grilled chicken.
Number of Servings: 4

Ingredients

    2 tbsp olive oil
    2 tbsp lime juice
    1 mango, peeled and sliced
    1 large onion, chopped in large chunks
    1 large red pepper, seeded and cut in large chunks
    1/4 cup cilantro, chopped
    1 tsp cumin
    salt & pepper to taste

Directions

1. slice veggies and toss in a bowl with the olive oil.
2. grill red peppers, onions, and mango slices on high on an outdoor grill until soft. Don't grill the mango very long, remove it once it has grill marks on it. If you don't have an outdoor grill just roast the red pepper and onion on a cookie sheet at 425 until soft. Don't roast the mango inside. Just chop it up in small pieces for the salsa.
3. Once roasted or grilled, dice the veggies, toss in the cilantro, cumin, lime juice, salt and pepper.
4. Mix and set aside while chicken is cooking.
