Ingredients

    4 catfish fillet
    2 tbsp light ranch
    2 egg whites
    3/4 cup yellow cornmeal
    12 tsp (4tbsp) reduced fat grated parmesan cheese
    1/4 cup white flour
    1/2 tsp cayenne
    16oz mixed vegtables
    1/2 tsp old bay seasoning
    1 tsp salt
    1 tsp pepper

Directions

Preheat oven to 425 degrees.
Combine dressing & egg whites in a small bowland mix well with a whisk. Combine cornmeal, cheese, flour, cayenne, old bay, pepper and salt in a shallow dish. Dip fish in egg white mixture and then dredge in cornmeal mixture. Place fish on a baking sheet coated with cooking spray. Bake at 425 degrees for 12 minutes on each side or until lightly browned & fish flakes easily when tested with a fork. Steam vegtables while fish baking. Season vegtables to taste.

Serving is 1 fillet and 4 oz of vegtables.
