Introduction

Ingredients

1 serving Barilla elbow macaroni
6 fresh basil leaves, chopped
1 serving Sargento reduced fat mozzarella stick cheese
1 slice Sargento reduced fat provolone cheese
8 cherry or grape tomatoes, quartered
Italian seasoning to taste
2 tsp. reduced fat grated parmesan cheese
1.5 tsp. olive oil (I used EVOO for robust flavor but whatever you prefer)
Directions
Serving size is for a one-dish single serving as a main course or 2 side-dish portions.
Cook the pasta according to the package directions and drain. Chop fresh basil (I really feel fresh basil is key for this recipe, but you could use dried if you need to). Quarter the tomatoes and chop up the cheese into fairly small pieces so that it will distribute through the salad. Mix all ingredients together and enjoy chilled or at room temperature.
Make larger batches ro bring to a summer potluck!
