Ingredients

    2 C grated zucchini
    1/2 C mashed ripe banana
    2 t vanilla
    2 C flour
    3/4 C sugar
    1/3 C Carob powder or cocoa
    1 1/2 t baking soda
    1 t salt
    1 T water

Directions

Mix together dry ingredients then add to wet ingredients. Blend batter will be stiff. Spread in a 9 x 13 baking dish non-stick or lightly sprayed or use parchment paper. Bake about 35 min at 350 preheated. frost or dust with confectioners sugar. Cut into 24 servings.

    Ghirardelli cocoa and about a TBSP of instant coffee give a deep, rich flavor.
