Ingredients

For dough:
3/4 cup, plus 1 tbsp all purpose flour
1 tsp baking soda
1/3 tsp salt
1 1/2 tbsp sugar
3 tbsp milk
For filling:
4 cup sliced fresh peaches
2 cups diced Rhubarb
1/2 cup sugar
1/4 cup honey
1/2 tsp Vanilla Extract
1 tbsp all purpose flour
1/4 tsp nutmeg
1/4 tsp allspice
Directions
Makes 8 3/4 cup servings.
For dough, mix dry ingredients well. Then add butter, using two knives to make a crumbly dough. Lastly, add in milk. Refrigerate for 30 minutes before using; you can use this time to get the filling and the pan ready, and to clean the kitchen, or make the dough ahead.
For filling, chop peaches and rhubarb, then put in pot over medium heat. Add the sugar, honey, vanilla, the 1 tbsp flour, the nutmeg, and the allspice. Simmer gently for 10-15 minutes.
Preheat oven to 350. Move peach mixture into a baking dish. Then dot or lattice the dough on top. Bake for about 25 minutes, until nicely browned and bubbly. Serve, if desired, with whipped cream or ice cream, but these would have to be added separately in your nutrition count!
