Introduction
This is a low carb high protein cookie that I revise every time I make them. I used as many organic ingrediants as I can find. This recipe lends itself to experimentation, change ingrediants if you like. I sometimes use a vanilla protein shake and use powdered or liquid. It is a great way to use up a protein shake you don't like. Also, being diabetic I use low carb protein shakes. I sometimes use almond meal if I am low on soy flour. -
Butter, unsalted, .5 cup
Truvia Natural Sweetener, 1 serving
Eggland's Best Large Egg, 4 serving

Directions
Cream the butter with the Truvia or other stevia product.
Add vanilla and eggs, then add protein shake and dry ingrediants. Add nuts and raisins last. Drop by heaping tablespoons onto cookie sheet sprayed with cooking spray (oil) This makes large cookies, and they do not spread much so you can place them close together. Bake at 350 degrees for about 15 minutes.
