Ingredients

1lb Ground Bison
1 can Organic Kidney Beans (drained and rinsed)
1 can Tomato Sauce
1 can Tomato Paste
1 small onion (chopped)
half of a green pepper (chopped)
Large garlic clove (minced)
5-6 Fresh tomatoes (or you can used canned)
1 fresh Pablano, Serrano or Jalapeno Pepper (if desired)
Mild Chili Powder (to taste)
Ancho Chili Powder (to taste)
Ground Black Pepper (to taste)
Ground Cumin (to taste)
Directions
In a medium pot, boil tomatoes until the skins split (skip if using canned tomatoes) - approximately 5 minutes.
Once the skins split, remove boiling tomatoes with slotted spoon and wait a few minutes for them to cool. Once cool enough to handle, remove the skins (they should slip right off).
While tomatoes are boiling, spray a large fry pan (with sides) with Pam.
Add chopped onions, garlic and peppers along with ground bison to the pan.
Saute on medium for about 5-10 minutes or until bison is completely browned.
Add rest of the ingredients (including tomatoes) to the pan and reduce heat to low-medium.
Cover and simmer for about 45 minutes, stirring occassionally. Add the spices to your individual taste. Enjoy!
