Number of Servings: 2

Ingredients

    1/4 medium onion, chopped
    1 green chili, chopped
    2 jalapenos peppers, chopped
    1/2 yellow bell pepper, chopped
    7-9 medium tomatillos

    8oz boneless, skinless chicken, diced
    1/2 cup corn kernals
    1/2 cup black beans (canned or cooked)

    1/4 cup reduced fat sour cream
    2oz Colby-Jack cheese, 2%
    1/2 cup cherry tomatoes, diced

    Spices to taste
    Cumin
    Cayenne
    Cilantro

Directions

Cook chicken in a saucepan until outsides are white
Add chili, jalapenos, pepper, and onions and saute until just soft
Add diced tomatillos, corn, and beans
Cover pan and cook for about 5 minutes until all ingredients soften

Add in sour cream and spices, cook another 5 minutes for a salsa-like consistency

Turn off heat
Mix in cheese and allow to melt
Toss in tomatoes and serve
