Ingredients

    1 Can chunk light tuna in water, drained
    1 can white albacore tuna in water, drained
    1 can artichoke hearts in water, drained and chopped
    2 ribs celery, diced
    1/2 medium or 1 small red onion, diced
    1/2 cup (a couple of palms full) of pitted kalamata olives in brine, chopped
    a handful chopped flat leaf parsley (3 T. after it's chopped)
    zest of 1 lemon
    juice of 1 lemon
    1/2 C. extra virgin olive oil
    salt and pepper to taste

Directions

Mix tuna and remaining ingredients to combine. Season with salt and pepper to taste.
