Introduction

Ingredients

1/2 a cup of jalapenos (chopped)
3 cups Roma tomatoes (chopped)
1/4 cup white onions (chopped)
1/4 cup cilantro (minced)
Garlic clove (minced)
2 limes (squeezed)
1 tsp salt
1 tsp garlic powder
2 chicken breasts
1 can black beans (drained)
Directions
Make the pico de gallo first. You're going to need a medium to large sized bowl.
*Chop up the jalapenos, white onion, and tomatoes to your taste. I like to leave the tomatoes a little chunky.
*Cut up the limes and squeeze the juice into the bowl.
*Mince the garlic and cilantro finely and add that.
*Add all the chopped jalapenos, cilantro, onion and tomatoes.
*Add the salt (salt to taste)
*Mix well
Put that in the refrigerator while you're cooking your chicken and beans.
*Cook the chicken breast with garlic powder and whatever other seasoning you think will be yummy.
You can you pretty much any kind of meat in this dish. I like chicken, pork and beef in mine.
*Heat your black beans on the stove top, drain them.
*Chop up your cooked chicken as much as you want, I don't care for chunky chicken so I shred it pretty finely.
When your beans and chicken are cooked, remove from heat and mix the beans, chicken, pico and stir.
Voila!
