Introduction

Pureed broccoli and roasted red pepper soup. Delicious. Pureed broccoli and roasted red pepper soup. Delicious.
Number of Servings: 10

Ingredients

    2 lbs of fresh or frozen broccoli
    1 large onion, diced
    3 garlic cloves, minced
    3 tbsp vege base
    1/3 brown rice (uncooked)
    3 red bell peppers
    1 lemon, juiced
    1 tbsp vinegar
    2 tsp fresh thyme
    1 tbsp ground tarragon
    1 tsp black pepper

Directions

In a large soup pot, combine broccoli, onion, garlic, 2 quarts water, vege base, and rice. Simmer, covered. Roast the red pepers in a broler. Quarter and remove the peel and seeds from teh peppers, then puree them in a blender with the softened broccoli adn some of the soup liquid. Return to pot. Add remaining ingredients.
