Ingredients

Crab, 1kg / 35.2oz
Cooking oil, 10ml
Curry Leaves, 1sprig
Turmeric, 5ml
Cinnamon, 1stick
Coconut milk, 250ml
Coarse Salt
Onions, 2 chopped
Bay leaves
Coriander, ground, 5ml
Cardamom seeds, 2-3
Curry powder, 25ml
Olive oil, 25ml
Garlic , 5cloves (crushed)
Cumin, ground, 5ml
Cloves, 2-3
Tomatoes, 4 (grated)
Flour & coriander, 25ml
Directions
Clean Crab. Keep all edible pieces (legs, claws). Discard teh spongy matter from the shell but keep the flesh. Wash several times and sprinkle salt over the meat.
Heat cooking oil in a large pan.
Add onions & garlic and saute until soft.
Add curry leaves, bay leaf, & the rest of the spices. Stir well.
Add grated tomatoes and cook until the mixture resembles a thick gravy.
Add crab and stir. Cover and cook for about 20 minutes.
Mix coconut milk, curry powder & flour in a bowl. Add a little hot gravy to the bowl, mix well, and pour into the pan.
Add chopped coriander leaves and bring it to the boil.
Simmer 5-10 minutes.
