Introduction

Ingredients

150g soft butter
1C sugar
4eggs
1C flour
1t Baking powder
2C desicated coconut (shreded)
zest 1 or 2 lemons
Syrup:
1/2C lemon juice
3/4 C water
1 C sugar
Zest 1-2 lemons
Directions
cream butter and 1C sugar
Beat in eggs
Sift in flour and BP then add coconut and zest of 2 lemons
Pour into cake tin and bake 45 mins at 160 or till firm
make syrup while cake is cooking by heating 1C sugar with lemon juice and zest till sugar is desolved (about 5 min)
cool for a few minutes before removing from tim and put on serving plate
Slowely pour syrup over cake. This make look crazy as there is so much liquid but trust me, it makes a moist, delicious cake that will go down a treat! If you find the syrup all pooling around the edges then gently work around the cake lifting the edges slightly with a knife to let the syrup go under it.
Cut into 12 pieces and enjoy!
