Ingredients

    3 Cups Frozen Corn (Thaw To Room Temp)
    1/4 C Lime Juice
    2 TBLS Olive Oil
    1 TBLS Red Wine Vinegar
    1 Tsp Salt
    1/2 Tsp Black Pepper
    1 3/4 Cups Chopped Seeded Tomatoes
    3/4 Cups Chopped Red Onion
    3/4 Cups Chopped Peeled Avocado
    1/2 Cup Chopped Seeded Jalapeno Pepper
    1/4 Tsp Chopped Fresh Cilantro

Directions

Chop All Vegies. Mix in juice, oil, vinegar, salt and pepper. Stir and serve. Makes 12 1/2 cup servings.
